Evaporation causes cooling because during evaporation the particle of the liqued absord energy from the surroundings to regain the energy lost during evaporation. the absorbtion of heat from the surrounding makes the surrounding  cool.

When you come from hot enviorment and have perspiration, then if you sit in front of cooler or fan, fhen you feel relaxed and cool. The reason is your sweat evaporates in the enviorment and that gives you cooling effect.

Another example is-
People say that water pot keeps the water cool. The reason is when you keep water pot in the room, water tries to evaporate and thus it looses energy. And so water bcms cool.
