Water to ice = Can be done by freezing the water at 0 °C (freezing point of water)

Ice to water = Can be done by melting the ice at 0 °C ( melting point of ice)

Water to Water vapour = Can be done by heating/boiling the water at 100 °C (boiling point of water)

*Water to Ice: By freezing. By decreasing temperature we make the molecules to come close and thus the water changed into Ice

*Ice to Water: By applying heat. The ice absorbs the latent heat(heat absorbed by matters to overcome their molecular force) and thus the ice changes into water.

*Water to water vapours: By applying heat. The water absorbs the latent heat(heat absorbed by matters to overcome their molecular force) and thus changes into water vapours.
