The process of obtaining a substance in its pure crystal form from its saturated solution is called crystallisation.

Aim : To make some crystals of sugar from its solution.

Materials required : 100 ml water, some sugar, a beaker, a bunsen burner and a string.

Procedure : Put the water in the beaker and add 5g sugar in it. Dissolve the sugar. Continue adding sugar in the water in beaker until no more sugar dissolves. Now, heat the mixture. Try adding more sugar into it. You will find that you can now dissolve more sugar in it. Again, continue adding the sugar until no more sugar dissolves. Now, carefully suspend the string in the hot solution. Allow the solution to cool slowly back to room temperature.

Observation : After sometime, you will find that sugar molecules are forming crystals on the string. With more time, large and well-formed sugar crystals will form around the string, leading to the formation of rock candy.
