What are some great examples of India's unity in diversity? I'm looking for examples that epitomize the "Anekta mein ekta" concept that lies ingrained in our culture, so please keep comments about "pseudo-secularism", etc. out.

Unity in diversity goes far across the border. This answer is not about unity in diversity in India, but in India and Pakistan.
It is a true story about an Indian and a Pakistani soldier.
It was 1971 Indo-Pak war. The Tank Regiment of India and that of Pakistan were face to face. There were heavy casualties on both sides. One Indian War Veteran who was going to retire in 1972 was also fighting at that front. His company was surrounded by the Pakistani troops. All their tanks were destroyed and one of the tanks burst near his ear and most of his fellow soldiers were dead. One bullet hit his chest but he kept on fighting. All the Indian soldiers who were still alive were still fighting for their motherland. But their ammunition was about to get over and surrendering was not an option for those bravehearts. They decided that they will die fighting but never surrender. Finally, their ammunition got over and instead to surrendering they decided to jump of the cliff into the river. That brave soldiers body was carried away to Pakistan. He was declared dead by the Indian Government and his family had done all his last rites in India thinking he has been martyred.
That dead soldier returned after 4 months.
Yes, he did come back after 4 months. How did he survive? When he jumped off the cliff into the river, his body was carried away to Pakistan. There a Pakistani soldier recognized him and took him out of water. These two had fought hand in hand in Second World War when Pakistan and India were a single country. They both were old friends, calling them brother will be more appropriate. That Pakistani soldier dressed the wounded Indian soldier in Pakistani Army dress and admitted him in the Pakistani Army hospital. That Indian Soldier stayed disguised in Pakistan for 4 months and came back to India when he was fine. He was very lucky because even now there are more than 50 Indian soldiers in Pakistani Jails who were captured by Pakistan Army in 1971 war and have not been released since then. They are tortured everyday and every moment. Pakistan has not followed the International War rules. Watch the Indian Movie '1971' to know more about them. This soldier too could have been one of them but that noble Pakistani soldier saved him.
