Ammonium chloride is a sublimable substance or a sublimate i.e. it changes its state directly from solid to gaseous state when heat is supplied, whereas the other component of the mixture, common salt, is not a sublimate.

So when heat is applied to a mixture of these, then ammonium chloride gets sublimated and settles on the walls of the inverted funnel leaving a residue of common salt only.
