How come sulphur and potassium are metals when they can be easily cut with knives? Whats the reason behind them classifying as metals?

There are som exceptiin in classification of metal and non - matal . like as sulphur and potassium can be easily cut by knife but still they are metal. because there other properties similar as metal.
