Helen Keller learned about the world around her through sense of touch. Helen Keller liked to be outdoors, so her teacher, Miss Annie Sullivan decided to work with this, believing that she could create learning opportunities while they were outdoors. Miss Sullivan actually thought this was better than the traditional approach that would have been spending a certain amount of time in the classroom everyday following a fixed curriculum. When she and Helen visited a school for deaf children, Sullivan thought it was the kind of environment that would stifle a child's natural curiousity. So, when Helen took an interest in something, she found ways teach her new things about the natural world. One example of how Miss Sullivan did this was when they where near a body of water, Miss Sullivan carved out a narrow trench by hand and let water fill it in. By doing this she created a small scale models to explain different bodies of water (it's a little bit like digging a moat around a sand castle at the beach and then filling it with water). This was how she explained rivers and streams and other bodies of water. Miss Sullivan encouraged Helen to explore the natural world via her sense of touch. It's possible a few insects or butterflies suffered a bit for her education, as she explored the intricate details of everything she could.
