Answer:

(i) Sugar and jaggery were mixed into the mango pulp to give it a sweet taste and then the mixture is dried in sun to make thick by removing all the water content.

(ii) Appa chosen the ripest mangoes because they contain more juice and taste the sweetest.

(iii) Brothers made the mamidi tandra by following the steps given below:

They bought a mat, casurina, poles, string made of coconut husk, some jiggery and sugar.  

They made a high platform by using poles and mat in the backyard.

Then they peeled the mangoes and extracted the pulp and juice in a vessel.

The pulp was strained through a fine muslin cloth, to remove the fibres.

They added sugar and crushed jaggery in equal amounts in the pulp and mixed thoroughly.

The mixture was spread into a thin layer over a mat and was left to dry in the sun.

They covered the mat with a clean saree, in every evening to avoid any dust.

Another layer of mixture prepared by same steps as given above was spread over the previous layer.

The whole process was repeated day after day until the layer grew four centimetres thick.

Then after a few days, the layer was taken out and into pieces.

(iv) Following things are made from ripe and unripe mangoes in our house:

Ripe mangoes: Mango shake

Unripe mangoes: Pickle, Chutney

(v) Different types of pickles are:

Mango pickle, Lemon pickle, Amla pickle, Chilli pickle, Radish pickle, Carrot pickle etc.
