Varna and Jati are same. Jatis or castes are like sub divisins of Varnas.

As human beings were evolving, they’ve chosen the profession/occupation they like and developed it. Their kids have learnt it from their elders as they grow up and managed the business which was readily available for them along with proper customer base. They have learnt and became experts in the area and developed it more. When you spend a lifetime on something, you obviously would like it to hand it over to your kids and their kids. So that is how it has been continued and varieties of Jatis have been created. The women of the family know and understand all about that profession as they see their elders doing it since their childhood and they are able to help and cope with the daily routine/regime of the family. So people have chosen wives from the similar families so that they can blend in easily and take the responsibilities without much training. They get support from their community and feel belongingness. Together developed the trade more and became more creative with the support of their peers. They have developed their own cultures and traditions and the world has become more vibrant and more colourful. Every little village has all these professionals/experts because they followed and practised their forefather’s profession.
