Mostly they got by- same as you and I now.

These folks worked, physically, hard because they had to.  They pumped water from a well or dragged buckets of the stuff up from a stream or spring, then chopped wood to make a fire to heat the water to make the coffee they ground by hand.  Flour, purchased from a mill, was mixed with starter and whatever salt and fat available to make a bread, by hand, kneaded and kneaded and kneaded, then baked in the ashes of that fire, or, if they had a small oven-shelf in their fire place, baked there.  Laundry was an all-day task of boiled water and lye soap in a huge kettle, turned and stirred with huge laundry paddles, wung by hand and placed over bushes and fences to dry.

There were always trees to fell, livestock to tend, perserving to do, shingles to make, utensils to fashion, fat to rend, wicks to make, spinning and weaving, knitting and mending.  These people worked all day long-  they had to in order to survive.  That doesn't mean they were unhealthy, though; usually the diet was adequate (which is why humans are omnivorous-  being able to eat almost any food stuff makes not starving to death much easier) and many illnesses, while treated with various herbs and other, more suspect substances, either killed or cured, just like now.  Infections were dangerous, but the human body works quite well and will often heal an infection by itself if given the proper nutrition and rest; one of the most dangerous activities for women in those times was to give birth-  childbirth could be deadly.

Go read books-  all of the skills necessary to survive- at least as well as our forebearers-  without electricity and modern medicine is available in books.
