A light on the left side of the door shines on photoelectric plate on the right of the door.
When light is shone on photoelectric plate it removes electrons from the plate and generates a (minute) electric current.
If you step into the ray of light, you interrupt the light, interrupt the current and this is a signal to open the door.
This is simplified but that is the general idea.
The light beam may not be a visible ray of light.
