An emulsion is a colloidal dispersion in which both the dispersed phase and dispersion medium are liquids. For example, when oil and water are shaken together vigorously is formed. To get stable emulsion, some foreign substance are mix in emulsion known as emulsifier. Some emulsifier are Here that are soap, detergents proteins etc.
In milk casein acts as emulsifier.

Surfactants adsorb at the interface between oil and water, thereby decreasing the surface tension. An emulsifier is a surfactant that stabilizes emulsions. Emulsifiers coat droplets within an emulsion and prevent them from coming together, or coalescing.
