The emulsifying agents can stabilise the emulsion be creating the interfacing layer between the medium and the suspended particles.  

An emulsion is known as the colloidal dispersion in which both of the dispersed phase and medium are liquids.  

Soap (in water) and casein (in milk) are the examples of emulsifiers.
