How do fire brigade and different types of fire extinguisher control fire

Fire extinguisher contain baking soda solution and Sulphuric acid at the time of Fire it produce fumes and result in the control of Fire but fire brigade contain only water

they contain carbon dioxide gas which helps to control fire.
