Jam is preserved by high concentration of sugar and by removal of moisture . This is not a terrain for bacteria or fungus to grow. In commercial jams there is always a preservative ( mostly sodium benzoate or potassium metabisulfate) for longer shelf life. But not good for our life.
In pickles ordinarily too much salt is added to make it inhospitable to bacteria and fungi. Vinegar also is added as a preservative.commercial pickles have chemical preservatives like sodium bezoateAn oil layer is added on top as a barrier. Some use a fine cloth with oil on top. Any fungi will start on the cloth, which is then replaced. Excess salt makes pickles noy healthy.
Pickles can be made healthy by minimising salt, carefully minimising moisture,using good quality ingredients , using good quality vinegar like ACV and oil. The pickle will ferment and the lactobacillus will keep harmful bacteria away. No extra preservative is added. Such pickles are a wonderful source of probiotics and vitamine K2. Keep it in the fridge and use only clean dry spoons. I am using a pickle of lemon and garlic.
