These all are the fermented food and makes using the microorganisms . Also the enzymes in it makes the availability of the mineral more easy also the carbohydrates as well as the fat are broken to simpler unit. This is exactly what happen lactose a carbohydrate which convert in to simpler form in these dairy products hence easily digestible and useful especially for the people having the lactose intolerance.
