how do the roots of trees help us?

So we cut down a small tree (8-9 ft) in our side yard and i have the roots left to remove. i was wondering how would be the best way to remove the roots? and if it would be easier if the ground was dry or wet?

main advantage: it prevents soil erosion
   roots of some herbs are used in making medicines
   in deserted areas, the oak tree's roots go deep to find water and store water in stems....its used by people
