They provide evidence for evolution because they suggest that an organism changed from using the structure to not using the structure, or using it for a different purpose. Vestigial structures help prove evolution because they show that we all evolve from our ancestors. Natural selection also plays a role here because we keep the traits that are useful to us and we start to lose traits (such as appendix) which are no longer useful. These 'useless' body-parts, otherwise known as vestigial organs, are remnants of lost functions that our ancestors possessed. They once represented a function that evolved out of a necessity for survival, but over time that function became non-existent. The vestigial organ Appendix present in the human body is proof of evolution.
