It all basically depends on the nature (heredity) and nurture (environment).

There are certain traits which are automaticlly acquired when we are born. You are genetically predisposed to them, for example having a peanut allergy or lactose intolerance. These traits are out of one's control. These traits start shaping your mind from the sensorimotor stage of development (0-2 years) and then you develop an autonomous response to them. Same thing goes for the likes/dislikes in music, art, personality and interest in a particular educational subject.

Then there is nurture which is the environment surrounding you which contains the family, friends, socio-economic side of the society you live in etc.

These elements dictate the inclination toward some particular likes or dislikes based on the observation done by your conscious (Id) and pre-conscious (ego) mind. One picks up some likes/dislikes from parents because they are the first and foremost authority figures in someone's life. Then the teachers which are secondary authority figures and then as the age progresses and one enters in teenage it is the feeling of superiority among the peers which drives a person to acquire another set of likes/dislikes. Another major element is the society which basically shapes the personality of an individual on a more topical level. We strive to raise our socio-economic level in the society by following some widely accepted set of rules (laws) to be able to be a part of that society and some even change their moral principals to be able to fit in (e.g Heinz Dilemma).
