how do we know that time is passing and how will be able to know if time stops?

No. First of all, time doesn’t move, but if something were to occur where we hit a time boundary, we would all be dead and the universe would cease to exist. Space and time work together as the space-time continuum. Time is connectd to any and all dimensions of space so if time ceases to exist in a certain region that means space stops as well and all motion, since everything in the universe on all levels, is in motion.
