While everyone is busy in talking, pay attention to them, register each and every word they say, try to figure out their motive/emotion behind the thing.
Important thing is to get behind the emotion that causes someone to do something or say something, with a good number of observations like this, you will get a pattern which will be similar across a range of very different people, and then you can figure out the way we behave.
It might be surprising to find out that most of us behave the same in similar kind of situations regardless of where we belong or where we are from. Our way of expressing the things might be different but the emotion behind stays the same

we study society from the origin of its people, theor involving culture and the changing behavioural pattern through generations. social scientists, therefore involve the study anthropology ,socialology ,etc.
