You have to know what you’re looking for and so does the student.
➡️You need good source material and the assessment criteria for rubrics.
➡️I would start with the OPI or MOPI (Modified) Oral Proficiency Test from the American Council on the Teaching of Foreign Languages, and you might give a look at the INOPT (which in my opinion is superior):
