it basically depends on the chemical/elements the firework is made of. when we apply heat to any element, the electrons in its valence shell absorb heat to become energetic and consequently they move into one upper shell (inside) . when the heat supply is stopped the tends to loose heat and as they loose the extra heat they move back into their respective shells emitting a colour depending on the nature of element.
