How do you predict the products of an acid base reaction? I know a salt and water is formed - which salt or how?

To predict the products of an acid-base ( neutralization ) reaction. One product is water the other product is salt .

For predicting salt if take the part of the base other than OH^{-}( i.e. the metallic ion) and put it on the first place and then take the part of the acid other than H^{+}( i.e. the non-metallic ion) and put it on the second place

Now it depends on the vallency of both metallic and non metallic ions that what subscript we have to put.. for this we have to learn their vallency and process of putting subscript.

Example:

HCl +NaOH -----------> NaCl + H_{2}O

Here notice the usage of metallic ion of base with non metallic ion of acid as per my above explainaition
