Hope it helps!!!

Because the false ceiling has air trapped in it and as air is a bad conductor of heat the doesn't move from room to outside. This keeps the room warm in winter.

When a false ceiling is built an area of vaccum is created within the original roof and the false roof, which does not allow any cold air to come inside, which makes the room warm in winter.
