How does an email message know where to go?

when u r email client(e mail software)wraps u r e mail with certain information about the e mail and forwards the mail to smtp(simple mail transfor protocol).Which smtp u use is configured in ur email software. u r smtp service accepts the email looks up the ip address and breaks up into packets and sends the packets to the destination through a series of "hops"(u can never control it smtp as it is inbuilt)............
