Baking soda is used in fire extinguishers along with sulphuric acid. When the need arises, the two react to evolve carbon dioxide gas. It escape from the nozzle of the fire extinguisher with force and forms a cover or blanket around the fire. Since the gas does not support combustion, the fire gets extinguished.
