Ans. Baking powder is mixed with the flour. When water is added to this flour to make dough, baking powder undergoes a chemical reaction during which carbon dioxide gas is produced. This carbon dioxide gas gets trapped into the dough and bubbles out which causes the cake to rise making it soft and fluffy.

Baking Soda is nothing but NaHCO3 which when heated undergoes a chemical reaction as follows : -
NaHCO3 ------>(heated) Na2CO3 + CO2 + H2O
The gas evolved here is CO2 which being less denser tries to escape to surface but is not able to due to weight of the raw cake. It results in formation of bubble like structure inside the cake make it fluffy and soft.
