Evaporation is an process of conversion of matter from liquid form to vapour form at normal atomospheric pressure at any temperature.

When 1 kg of matter is converted from liquid to gaseous form, it absorbs 22.5 x 10^5 J of energy ( i.e, latent heat of evaporation ) while the heat is supplied. After it gets in contact with any surface, it transfers the particular amount of energy to the following surface in form of vapour. Hence, after the energy is released it causes cooling.
