An increase in the surface area causes an increase in the rate of evaporation.
Plants have stomata (small bean shaped tiny pores) on their leaves that transpires water vapors. If the leaf has a larger surface area and it's a sunny day, the leaf loses water and loses its turgidity. To avoid this, some plants have folded leaves to decrease the surface area on the exposure to avoid water loss due to transpiration.
