When fats are oxidised, they become rancid and their smell nd taste change. This is called "rancidity".
It can be prevented by:
1)adding antioxidant
2)keeping the items in nitrogen flushed bags
3)keeping them in air tight containers.

Explanation:

Oxidation of metals is known as corrosion. During this process, an oxide layer get deposited on the surface of metal and thus, it gets tarnish and some metals becomes orange-brown in color due to oxidation.

For example, oxidation of copper forms copper oxide.

Corrosion of metals can be prevented by galvanization, greasing, anodizing etc.

On the other hand, when fats get oxidized then this process is known as rancidity. Rancidity causes a change in taste and smell of fats due to which we get to know that the fat is not suitable for consumption.

Rancidity can be prevented by adding antioxidant in the food item, keeping the food in nitrogen filled bags or air tight containers etc.
