The oxygen plays a vital role in the process of fermentation because of the following fact-

Although it's wrong to say that the yeast cannot respire without oxygen but we must understand the process of respiration of yeast during fermentation.

Respiration is the process of production of biochemical energies through the process of oxidative phosphorylation.

In this process, the glucose is oxidised and the energy this released is stored in ATP.

Oxygen is indispensable for the completion of this process. hence this is the role of oxygen in fermentation.
