Plants like Rheo or Crotons which are purple, red or non green in colour have higher percentages of pigments like Anthocyanins, Xanthophylls, Carotenoids, etc. It doesn't mean that they lack in Chlorophyll.
They do have Chlorophyll and they go for photosynthetic process as normally as common green plants

The leaves of purple plants still have chlorophyll which looks green to us. so since they have chlorophyll, they can carry out photosynthesis. however, some plants have a lot of compounds called Anthonyanins which can be red or purple in color.
