As we put cucumber in salt the water present inside the cell comes out because of plasmolysis in which water flows out from the region of low concentration of solute to high concentration of solute since the solution is hypertonic .. In easy word water flows from high water concentration to low water concentration.. Does the cells of cucumbers shrinks.
But as soon as we put it into the fresh water the reverse process takes place as the water now acts as hypotonic solution so the cell will take up all the loosed water again and will gain its shape
