How does the acidic food present in the small intestine is converted in to alkaline for
the action of pancreatic enzymes?

Answer: Due to HCl in the stomach the food is acidic in nature when it enters the small intestine through the sphincter muscles.

The food is then turned alkaline due to the action of bile secreted by the liver.

The bile also emusifies fats.
