This is because there is a presence of water at certain depth in soil.
It also protect them from loss of water due to sweating.
The temperature below the earth surface is also low that protect them from heat.

In deserts, the temperature usually remains high and the area also lacks the availability of sufficient water. So , animals have to adapt various adaptations to survive in such harsh condition.
They have many more features in their body to improve the chances of survival like presence of exoskeleton, extra covering over eyes to protect them from dust.
