Rancidity is defined as aerial oxidation of foods containing fats and oils that gives a foul smell and taste. The food becomes rancid when the fats and oils present in good reacts with oxygen when left open in the air.

Well,for increasing taste fats or oils are added to food.After some time because of air in surrounding fats or oils oxidises making foul smell and bad test.This process of oxidation of fats or oils is called as rancidity.It can be prevented by adding some antioxidants in food like Butylated hydroxy anisole or Butylated hydroxy toluene.This antioxidants stops oxidative deterioration of food.
