One major role of HCl in the stomach is to help break down protein. Your stomach lining contains specialized cells, called parietal cells, that release stomach acid in the presence of food. ... When stomach acid comes into contact with pepsinogen, it turns it into an active enzyme called pepsin.

Stomach acid does not digest protein. Rather, it activates an enzyme called pepsinogen which then becomes pepsin that is secreted by the stomach wall. This enzyme is only active within the pH range of 3.0 to 5.0 and requires the acid to maintain that pH.And it help to digest the food and much more
