Milk is converted into curd or yogurt by the process of fermentation. Milk consists of globular proteins called casein. The curd forms because of the chemical reaction between the lactic acid bacteria and casein. During fermentation, the bacteria use enzymes to produce energy (ATP) from lactose.

Answer: The coversion of milk into yogurt is a chemical change which is caused when anything acidic is put into milk. When even a slightly acidic substance is added into milk, it changed the pH of the milk.This sudden change in pH causes the protiens and fats to attract to each other which forms curdled masses.
