hey bro here is your answer....
first of all the milk is pasteurized to eliminate all the bacteria which can be harmful for the processing of milk into yoghurt. then milk is heated to 80 to 90 degree Celsius for about 30 minutes and cooled to 30 to 40 degree Celsius and inoculum is added. This inoculum is consisting of previous yoghurt which has Streptococcus thermoacidophilus or Streptococcus bulgaris bacteria in them which leads to the formation of yoghurt in sometime which is then packed and sent to the market.
