if the structure of ionic bond is not stable it's ionic compound will be not stable, for e.g. in the formations of Nacl compound if the elements in the Nacl is not completely octet then there will be no formation of ions(cation, anion) because of which there will be no attraction between the elements and hence compound will not be formed
