Earthen pots have very small pores as it is made from clay soil.

These are naked to human eyes.

Water goes to the surface of pot and get evaporated.

The energy required for evaporation is met by the heat of water.

In this heat get lost and water get cooled.

And as pores are so small, water doesn't get reduced too.
