The reason for cool water in earthen pot is written below-

Earthen pot is made of clay. It has little pores in it. The water in earthen pot evaporates, due to high temperature outside.

The water moves out due to capillary action. This evaporation of water causes removal of heat, thus lowering the temperature of water.

Hence water remains cool in summers in earthen pot.

Explanation:

An earthen pot has small pores in its walls . when water is poured into it , some of it seeps through these pores on its outer surface . on reaching there , it evaporates . the heat required for evaporation is taken from the earthen pot and from the water in it . As a result , the water in a earthen pot gets cooled down .
