By evaporation, As you know that the walls of the earthen pot is porous which led to seepage of water through it that's why we find the walls of the earthen pot wet. Now the water which comes out of the pot will evaporate and as you know evaporation causes cooling. So in order to evaporate it will absorbe some latent heat from the pot. And this makes the water inside pot cold.
