becoz earthen pot has small pores on its walls.Heat from the water present inside the pot gets evaporated off through the pores leaving the water inside the earthen pot cool.

becoz  earthen pot have small pores which can't see with naked eyes water gets evaporated  through the pores. Cooling is caused by evaporation. Some heat energy is utilised during the process of evaporation. Since this energy is taken from the water itself, it leads to a lowering of temperature in the remaining amount of water.
