The loudness of sound increases. In scientific term, it's decible increases. The pitch is determined by frequency. For instance for a typical guitar second string also called A string, it's frequency is 110 Hz. Hence the pitch u hear no matter how hard you plug it is the same A. The only difference is u hear it louder if you plug it violently because u increase its amplitude..
