Artificial selection has helped to grow new varieties of desired hydrid characters and pure vegetables.Once such method is outbreeding devices.It has 2 steps namely Esmasculation and bagging.

Eamsculation is a process of removal of anthers from flower bud of bisexual flowers using forceps to prevent self-pollination.
After emasculation these flowers are covered by a butter paper to prevent contamination of unwanted pollens.

human developed various kinda vegetables from wild cabbage by artificila selection
some wanted to select for very short distances betweeen leafs and end up with the cabbage we eat now
some foccussed on flower developement and bred broccoli and for sterile flower cauliflower.
some selected the swollen part and came up with kohlrabi.
Some simply looked for slightly larger leaves and result was kale
