Not all easterly winds are trade winds. It refers to those blowing across the sea in the topics. As it happened, those were useful for providing the quickest route across the Atlantic. Apparently, the first meaning of 'trade' in this usage referred to 'track' rather than 'trading'. The wind provided the best track across the ocean. However, as trade expanded, they were the best winds for traders to use as well, and that presumably reinforced the use of the term....
