How higher plants stand erect in air and their soft organs remain firm?

Because the outer surface of the plant get a deposition of substance like tennins,resins that make it hard and dead. It doesn't conduct water but gives mechanical strength to the plant

The plants are mostly negative geotropic and positive photo tropic because of the Phytohormones or popularly known as plant hormones in them.  

Due to this feature higher plants stand erect in air and their soft organs remain firm.

Because of this, the plant shoot grow towards light (sunlight) and away from gravity (upwards). All the roots are positive geotropic in nature.
