Use Sulphuric acid (dilute), which causes the reaction:
2NaHCO3+ (dil.) H2SO4--->Na2SO4+2H2O+2CO2
The carbon dioxide released mixed with the water under the conditions inside the fire extinguisher (low pressure due to using up of reactants) causes a foam to form, which is what is expelled from the extinguisher.
This is not an exact depiction of the mechanism, but gives the general overview and observations.
